
The most sought-after Cleaver/Large Nakiri from Kurosaki san's latest series, Juhyo!
The Kurosaki Chinese cleaver is a very unique knife. Just like all the other Kurosaki knives, this is a stainless cladded knife with the super hard Aogami Super (Blue Super, AS) carbon core.
The knife is ground super thin behind the edge, and at only 180mm in length, it feels very nimble. I like that you can get the same functionality as a normal Chinese cleaver without feeling too large (a Sugimoto 6 is measured at 220x110mm).
This is more of a slicer grind therefore you should not use it to chop bones.
